How can I create the setup under a different name.
Open the Node Management tool ("Tools->Configure node services" menu, or use the toolbox button). It will show your current setup. Change it as you want, then store it using the Node Management tool's "File-
Store Configuration" menu - it will ask for a (new) name and you will also have the option set the new configuration as the default.

Is there any way to change the VPS to unmated, maybe in a settings option. I hate to mess up the configuration by removing the services.
Joel,
Presumeably your current setup is stored already. You can change this as much as you like, storing any new setup under a different name i.e. you can always return to your current setup if you need to. If the new setup turns out better, you can make it your default (by storing it again an enabling the checkbox to make it the default).

I was wondering if the default setting in VIC can be changed. Default is mute, can it be changed to unmute.
Joel,
Are you using a VideoProducerService (perhaps together with VideoConsumerService)? If so, try removing them and replace with a plain VideoService, which starts up unmuted by default and also receives incoming video.
